Summer Avocado Focaccia

What a perfect focaccia to eat during an aperitivo with friends!

Super fresh and tasty, to serve even cold😉

Here’s the ingredients:

  • 2 ripe avocados

  • Halloumi

  • 1 red onion

  • Pistachios

  • Crushed chillies

  • half lemon

Procedure:

  • Prepare the avocado cream just blending the avocados, squeeze of lemon, salt, peppers and crushed chillies and leave it on the side

  • Slide the halloumi and grill it

  • Bring to boil a pan with water, glass of red vinegar and salt

  • Cut the onion in half, then quarters and boil them for about 5-6 mins

  • Cool the onion sliced and pass them onto a hot frying pan for 3 mins and leave them on the side.

  • Crush some pistachios

Time to eat👍

Stretch your pizza, drizzle of EVO and straight in the oven until golden,

Once is out cut in 6 slices( more fancy😉) and cover them with the avocado cream first, sliced grilled halloumi, onions and granulated pistachios.
