Smoked Salmon Pizza Brunch
This pizza was made for a perfect brunch 😉
The dough was made with a 100% type 1 Italian flour with cold pressed wheat germ! That’s a plus👌🏻
68% hydrated
20% stiff starter
3% salt
3% EVO
Cooked in a normal kitchen oven with my baking steel at 280°C ( degrees on the steel😉)
The dough and the toppings will make a super light sourdough pizza perfect to enjoy for brunch😊

rocket
smoked salmon
White yoghurt
Lemon zest and black pepper
