Pineapple & Octopus

I know that pineapple on a pizza is the most controversial topic ever! 

I’d say YES to 🍍 but with consciousness.

I’ve always loved to mix and match different flavours for my pizzas and this is one of them: let me introduce my way of using pineapple on a pizza:

Ingredients:

  • Ripe pineapple

  • Fresh/ frozen octopus

  • Fiordilatte mozzarella

  • Coffee powder

Procedure:

  • get a pot, add water, a squeeze of lemon and bring it to boil.

  • Once the water is almost boiling hold your octopus and soak it for a few seconds (just the end of the tentacles). Repeat this operation 2-3 time until the tentacles gets curly and finally soak the whole octopus

  • Cook it until gets tender ( depending on the size of it but roughly 30-40 mins)

  • Main time cut mozzarella and let it dry

  • Take the skin of the pineapple and slice it very thin

  • Grill these slices until get slightly charred

  • Once the octopus is cooked let it cool down completely and slice it as you wish and grille it 😉

Stretch your pizza, add mozzarella on and bake it!

Post baking you add nicely the slices of pineapple, the grilled tentacles and a sprinkle of coffee powder on top.

This is my idea of a pineapple on a pizza😋
