Pea Cream & Ricotta
What a fresh and light pizza that was😋
I really love making the dough but if there is something the I love as much is preparing fresh toppings.
For this pizza I used:
Homemade pea cream
Fiordilatte mozzarella
Leek
Fresh ricotta
Cherry tomatoes
Homemade pea cream:
boil for 20 mins some peas until soften and blend to make a smooth cream. Add some hot water if needed ( season with salt n pepper) and cool down
Wash and slice the leek and quickly cook it in a hot frying pan for about 3/4 mins. Cool it down
Cut cherry tomatoes in 4 and season with some salt, oregano and EVO
Stretch the dough ball and add the homemade pea cream with fiordilatte mozzarella and bake.
Post baking you’ll add the other ingredients ( leek, ricotta and cherry tomatoes)
A drizzle of olive oil and that’s it!
