Become a Pizza Pro
Brilliant, if you’re here you already have some experience on making pizza but you want to know more about it & level up your skills to reach the flavour & consistency you always had in mind.
You know making pizza is not just mixing 4 ingredients but there is a huge world behind and online there are so many informations about it that you don’t know who to follow to get it right. Making pizza is planning your time in advance, research quality products (flour for instance), experimenting different methods to improve the result and you know what? I’m here to help you clear up your mind!
I’ll be honoured to be your right-hand man during the whole process!
These are going to be 3 days together:
We’ll divide the course in 2 steps: THEORY & PRACTICE!
Type of dough:
we’ll choose together the type of pizza you’d love to improve your skills on, i.e.: Neapolitan style, Roman style, alla Pala or in Tray style.
What we’ll do together:
creating new dough recipes and new working methods
understand how to blend different type of flours
explore the world of indirect dough, using preferments like Biga
create the perfect cornicione
understand double fermentations
high hydrations and which benefit brings to our pizzas
different baking temperatures for different products
help you standardise your pizza process. It’ll be easy to replicate
tips for seasonal toppings
theory: we must dedicate some time to it
Your pizza won’t be the same after taking part of this course! Trust me!
For the practice session, we’ll work side by side making the dough together (you’ll not find an already-prepared dough to work with) so you can follow me while I can see your technique and make adjustment along the way.
Before we start, what you’ll need:
pen and paper (many notes to take)
pizza stone or steel or a pizza oven like Gozney Roccbox
Where we can meet:
at my house/lab in Bergamo (North of Italy)
at your house (only Europe/UK for this course)
Total duration: approx 6/8 hours divided in 3 days

*if the course will be at your house the price is excluded of transport & accommodation
