What an incredible journey it has been working with Alfies Sandwiches in Toronto, Canada! Over the past few months, I had the privilege of helping Alex, the passionate owner, bring his vision to life—starting with 3 months of online consulting and continuing with 1 month of in-person collaboration to perfect every detail before the grand opening.

Together, we explored different types of dough, experimenting with sourdough and biga to achieve the ultimate texture and flavor for his sandwiches and focaccia—while ensuring the concept remained sustainable and scalable. We tasted countless ingredients, selecting only the highest quality Italian products, and I guided the kitchen design to create a fully functional, efficient workstation. I also researched and recommended the best equipment to bring his ideas to life.

Today, Alfies Sandwiches is not only open but already a huge success, becoming a must-visit spot in Toronto for food lovers. 🍞🇮🇹
