Bolognese

This pizza is all about the sauce! We have to make it right to have a very rich and delicious pizza!

INGREDIENTS to prepare the sauce:

  • 500 gr of mince meat 20% fat

  • 3/4 celery sticks

  • 3 carrots

  • 1 onion

  • 1 fennel

  • 1 glass of red wine

  • 700-800 gr of Passata/ chopped tomato sauce

    Procedure:

  • cut into cubes all the veggies and cook them into a hot pan with a generous drizzle of EVO and simmer for 15 mins

  • Time to add the mince meat in the same pan, turn the heat up and cook it, stir it from time to time for about 10 mins

  • Add the glass of red wine, stir and wait until the alcohol is evaporated

  • You can now add the tomato sauce (PS no salt at this stage) cover the pan with a lid and cook at low heat for at least 2 h. Stir the bolognese sauce every 15/20 mins

The sauce has to be quite dense, if not let it cook a bit more until you reach the right texture

  • let the sauce cool down completely and season it

Stretch your pizza, add fior di latte mozzarella and spoon out your BOLOGNESE sauce evenly on top and bake it (alternatively you can cover the whole stretched pizza with sauce and mozzarella to it).

Post baking add a generous amount of Grated Parmesan cheese, black pepper and ENJOY IT!
